They made wraps and cake pops today and most of them said it's easy enough that they can make it themselves for their lunch box....so parents, test them to see if they can 😄. Chicken Wrap Simple ingredients and easy as making a sandwich but in a wrap. Start with a tortilla (spinach, whole wheat or flour) Choose a spread, we used Chipotle Aioli or Mayo We topped the wrap with lettuce, tomatoes, onions, cheese and they had a choice of Deli Chicken or Chicken Strips. Ranch dressing to top off the chicken strips and a little aioli to top the Deli Chicken. Then the wrapping bring the instead to the middle and fold in outside ends over your ingredients. Then roll the bottom end all the way making sure to tuck the ends and the ingredients as you fold. Finally slice in half and enjoy 😋 Cake Pops Who doesn't love Cake on a stick in the shape of a lollipop? ☺ In line with our Reduce, Reuse, Recycle week we reused 1 day old (untouched) cupcakes that were about to be tossed alway for our dessert. No worries, I didn't go dumpster diving, they were from my dad's birthday this past weekend 😄 Here's how to turn cupcakes into cake pops Start by scraping all the icing off and placing it in a bowl Them remove the wrapper from the cupcakes and place them in a separate bowl. Using a fork, crumble the cupcakes up. Mix in one spoonful of icing per cupcake. It should have a consistency of dough. Form into balls and place on a pan Dip your stick in some frosting and insert into the cake pop. Refrigerate for 30 mins so they won't fall apart. Warm cake frosting of your choice to the point that it's easy to pour (about 45secs in microwave) Remove your cake pops then dip the cake pop into the frosting. Place on a muffin wrapper or parchment paper and let chill for 5-10 minutes Then enjoy!

Cooking Class went great yesterday and of course our campers wanted us to share the recipe to make our delicious desserts at home. (Photos in the app) We had some amazing chefs with beautiful presentations. We made Fruit Parfaits or Creame Pie fruit Kabobs and sugar cookies with whip cream. The cream was the best part. Here's the simple recipe. Equal parts Philadelphia Cream Cheese and Cool Whip Powdered sugar and vanilla extract Graham cracker crumbles for Parfaits Or mini Graham cracker crust for pie Plus your favorite fruit For a small serving size 1/4 cup of cream cheese (room temperature) 1/4 cup cool Whip 2 tablespoons of powered sugar ( or more for taste) And half a cap of vanilla extract For Parfaits make layers of Graham cracker crumbles, cream, then fruit. For pie, simply spoon into the pie add fruit or Graham cracker on top. These are approximate measurements, I really just let my spirit lead me 😄 when I measure. This also makes for a delicious dessert pie if you use a whole block of cream cheese and whole tub of cool Whip and 1/2 cup of powdered sugar with vanilla. Blend until smooth. Spoon into a large Graham cracker crust Refrigerate for an hour. Serve cool with any berries.

Turn SOUND ON to hear the message One more thing! If weather permits, tomorrow is water play day on the field! Campers should bring swimwear, swim shoes, a towel, and change of clothes. We'll have music, Hawaiian Ice and S'mores. It's going to be a great time.

First day of camp at Stone Mountain Park is in the books and we had a fun! Glad you all found us this morning nestled in our corner of Stone Mountain. Be sure to use GOOGLE MAPS and navigate to SPORTS PAVILION, STONE MOUNTAIN. It brings you directly to the pavilion. Also look for our signs if all else fails. They are at each entrance and at each turn you should take. Tomorrow come straight to the Green Flag for temp check and drop off. See you tomorrow at 8am for drop off And again between 5-5:30 for pick up.
